2002 Cœur de Cuvée, Vilmart et Cie

The flagship Champagne, made from 55 year old vines, aged in barrique of which half are new oak.

Inviting aromas, with a complex and evolving mélange of orchard fruit, bready-yeasty notes, citrus, kernels and vanilla amongst many. The palate is tight and focused with a taut minerality, tremendous purity of fruit, perfectly poised and with great depth. The soft, creamy mousse, never overdone here, brings a rounded soft aspect. Elegant and refined with a skilful balance of fruit, structure and oak. Notably vinous in character with a scented persistence, this is worthy of further cellaring. Hugely enjoyable (as all Champagne should be), but also demanding of attention and thought, whether as an aperitif or with food.
