Peruvian Fine Wine
Though its roots stretch back to the 16th century, for much of its history, Peruvian wine has revolved around the production of pisco rather than quality wines that reflect the country's unique terroir. That has changed in recent years, with the Ica Valley, around 200 miles south of Lima, leading the charge. Here, producers such as Tacama – which lays claim to being one of South America’s oldest wineries – harness the desert climate, tempered by Pacific Ocean breezes, to work with varieties such as Tannat to produce rich, concentrated, dark-fruit flavours complemented by fine tannic structure and balanced acidity.
